I have no answer for you as to why watermelons specifically taste better with salt, but salt in general is universally used to enhance the flavors of whatever we are eating.
I've read a couple articles as to why this is, one of them includes a theory about the salt causing the taste receptors to become more sensitive, but general culinary practice states that salt is used like a magnifying glass to put focus on particular flavors.
That's why chefs put salt in EVERYTHING. Why do you think cookie recipes call for salt? I had an uncle that would eat grapefruits with salt and pepper. I've never tried it, but I have no trouble believing that it would be good.

Can I have a job?
Honestly. I have a degree in robotics from MIT. I am not far from CalTech. Even something as small as an internship or something would be appreciated.
