Eh, the plain white rice isn't too out of the way. Or at least at my Chipotle we have steamers under the counter with the plain rice pans that hasn't been tossed with cilantro and the juice yet, so you can just go back there and get some. We usually have tons of rice prepped.

I don't know what they do to that chicken (it comes in the marinade), but as someone who has worked grill at Chipotle, it is way easier to cut than my chicken at home. Slices like butter. Maybe I just need a better knife.
