Go to a restaurant that claims to be Sichuan/Szechuan and ask for Huo Bao Yao Hua

It's Pork Kidneys sculpted into a grid pattern (preferably thin diamond-shapes) stir fried with hot peppers and a lot of other thinly sliced vegetables. Kidneys, as you can imagine, are pretty smelly raw. By carving it and exposing maximum surface area to the stove, you get rid of all the stink (with something like vinegar, or alcohol. I don't know what they actually use).

If the dish still stinks, the cook is bad. If the kidney isn't in a floral pattern (a huge plain slab for example), the cook is bad.

This dish isn't representative of Chinese cuisine authenticity. It's just one of tens of thousands of real chinese dishes that lazy/fake/fusion restaurants wouldn't put on their menu.
