I'm guessing it's not so much a break even as a loss prevention. Imagine if they get their ingredient deliveries on every Sunday and every Thursday, and in order to use up the maximum amount of ingredients before they have to toss whats left to make way for the new shipment, they sell as many pizzas as possible right before the day of the ingredient delivery. Not an issue during the weekends because people generally eat more pizza on the weekends, but the monday - wednesday crowds might be pretty small.
