What are racing pigeons and why are they so frequently shipped around?

Wow that's way more interesting than I thought! Any info on where I can follow this sport/contest?

Do they make stops on their journey home or do they just bee-line it straight back? And do they ever affix GPS to these birds during races?

Also regarding the carrier pigeons in wars, how can you send a message via pigeon without risking it getting intercepted if they're being shot down?

Can you gamble on these races? Sounds way more exciting than horse racing!
