A question for you: what's your favorite Chinese Cuisine (and dish)? Are there any Chinese cuisines you find to be particularly underrated?

I'm a first-generation immigrant myself. My folks back home have sworn off street food for fear of digouyou etc. I have no idea if their fears are justified.
