If you’re using Markup on iOS, don’t use the highlighter to mark things. Use the marker or pen and scribble a lot. The highlighter is always slightly transparent.

You could make some information available online, for hardcore players to seek out. Regarding things like turning radius being related to the actual shape of the vehicle rather than an arbitrary configuration number, you could list the wheelbase in some arbitrary unit of distance.

To add to OP's statement: the primary issue is probably maintenance and repair costs. Go-karts aren't designed to be hitting each other, so when that happens, something gets damaged, even if it's in an unnoticeable, minor fashion, it'll get worse with time. A business wants to minimize costs, so forbidding bumping on the go-kart tracks makes sense.
