Mr. Brown, Thank you so much for doing an AMA. I have just now got into cooking and your Good Eats show has been amazing. I really don't want to be a recipe drone, I want to know the science behind things and you do a great job at presenting all sides of a dish.
As for my question, I'm having a big problem when I do pan sauces with the reduction not taking place fast enough. I got the heat on as high as I can, but my protein ends up cooling down significantly while I wait for a good reduction, I don't believe I'm using too much liquid, but how can I get my reduction to speed up?

I was doing my preflight walk around the other morning and the rampers had a dog in his crate just sitting out in the freezing cold with no rampers in sight. I was pretty pissed off, called the operations department immediately to have someone come out and put him in the cargo hold asap. I hate when people check their dogs, it is a very scary environment for animals and incredibly stressful.

Or perhaps local police departments are being ran and employed by a large group of gulf war II Veterans who are treating police works as if they are still in Fallujah. They see the citizen as a potential enemy, not as a citizen.
