Also in the youtube clip linked above he geeks out about seeing the process of a jellyfish's sting, having the pleasure of being the first person in the world to see how it works, how he'd do this for free, how it's his reason for getting up in the morning, etc.

You basically soak it in water to let the flavor "bleed out" and squeeze it out after. My mom mainly does this with bittermelon to get that bitterness out, though a hint of it still remains. Same with bitter greens.
