According to my possibly faulty memory of an episode of Good Eats: Salt is an electrolyte which means a small amount helps conduct the electricity better across your taste buds. That is why a dash of salt makes everything taste more like itself. It's basically enhances your sense of taste.

The key here is not to use too much, unless you are making something where the salt taste is what you are going for, like on french fries or whatever.
